2 cups soaked raw almonds(soak for approx 3-5 hours, drain and rinse) 1/4 cup sesame seeds(ground into flour, I use a electric coffee grinder) 1/4 cup tahini 1 juiced lemon(add as less if you like) 1 clove of garlic 2 tsp ground cumin 1 tsp sea salt Fresh ground peppercorns(to your taste) 1 cup minced/finely chopped cilantro 1/4 cup minced/finely chopped parsley(save for garnish)
This is such a quick and simple recipe. Wrap these tasty yum yums in your choice of leafy green. Garnish with thin slices of red onion, chopped tomatoes, tahini sauce and the minced parsley. These falafel are also an amazing addition to any salad.
OK back to the recipe! Process all the ingredients until they are almost smooth. (I like a little texture to my falafel) Now you roll the mixture into balls and press them into portion sized patties. If you have a small or medium ice cream scoop, they work like a charm. I like to dehydrate my falafel for a couple hours prior to serving. They almost get the same kind of texture you have with the pan fried falafel.
Tahini Sauce
1/4 cup Tahini 1/4 cup olive oil 1/8 cup lemon juice 1/4 cup water(add just enough water to thin sauce) 2 cloves of garlic 1 tsp sea salt
Blend all ingredients in a blender until nice and smooth.
